Chic'n Pesto-Matcha
CHICKEN RIBBED, ASPARAGUS WITH PESTO X JAPANESE MATCHA CEREMONIAL GRADE A
For 3-4 people / Preparation time 45 mins
- For the Pesto sauce:
- The tops of a radish sprig
- A sprig of arugula leaves
- A few basil leaves
- 50g of almond powder
- 50-70 ml cashew milk
- Salt, pepper,
- 1-2 teaspoons of Premium Ceremonial Matcha
- 1 chicken breast per person
- 4-5 green asparagus per person
- 500 ml of pre-infused Detoxology tea
- Salt and pepper
1) For this recipe I wanted to poach the chicken breast and green asparagus in our Detoxology green tea, because it adds a very delicate flavor.
2) Peel the green asparagus, trim and remove the fibrous parts and cook for about 6-10 minutes (depending on the thickness of the asparagus) in the previously brewed Detoxology tea. Remove the asparagus and poach the well-cut chicken breasts in the same liquid for another 20 minutes or so.
3) Wash the radish leaves, arugula, and basil thoroughly. Add all the other ingredients and blend until you get a smooth sauce. Vary the amount of cashew milk according to your taste and how thin you want your pesto to be.
4) For this pesto, very different from classic recipes, we emphasize the synergy between the green leaves used and the Matcha. Cashew milk provides fluidity while maintaining a nice lightness. It is of course possible to replace the cashew milk with oat milk or single cream.
5) Serve the chicken breast and asparagus topped with the pesto sauce. Garnish with tomatoes and/or other fresh vegetables.
Here we've chosen to present our Matcha Pesto with chicken breast and seasonal green asparagus. But this multifaceted recipe can be adapted to various types of dishes, including pasta dishes. You can also imagine it as a topping for stuffed artichokes, roasted pumpkins, and many other preparations.
